This rutabaga puff is a casserole made with mashed rutabaga, eggs, butter, dill and other seasonings.

I have made this recipe many times and we love it. I always add a jalepaneo pepper with seeds as we don't think jalepaneo are too hot. (HA) And we grow them in our garden too.


Ingredients
4 cups cooked, mashed rutabag about 1 large ( 2 1/2 to 3 lbs)
4 tbl of melted butter
1 tsp fresh chopped dill weed
1 teaspoon salt
dash pepper
dash paprika
4 eggs, separated

(IF you like a little kick add a jalepaneo pepper and if you want take out the seeds and chop fine)

Combine mashed rutabaga, butter, dill, salt, pepper, and paprika. Blend in egg yolks. Beat egg white until stiff peaks form: folk into the rutabaga mixture. Lightly pil into a greased 1 1/2 quart casserole. Bake in a preheated 375 oven for 30 to 40 minutes, until set and top is golden brown. Spoon into a serving dish and serve.
Serve 4 to 6
