whole filleted rainbow trout
chopped onion
spinach - fresh or frozen that's been defrosted
1 garlic glove
basil - fresh or dried
salt & pepper
tablespoon or two of olive oil
1 lemon for juice

okay, amount of stuffing ingredients depends on size of the trout. i usually get small/medium sized fish and cook two, so the following is based on that size/amount of fish. rinse the fish and pat dry and set aside.

1/2 a medium onion chopped into fairly small pieces
1 good sized garlic clove diced
1 to 2 cups of spinach - thawed frozen...use 4-5 cups if using fresh

heat oil in pan on low/medium heat. while oil is heating up, put in the the garlic and basil and then add the onions once the oil is hot and saute on low heat until just getting clear. if you are using fresh spinach, add it in when the onion is just starting to turn clear. if using thawed spinach, add it after the onions are have turned clear. remove from heat once the onions turn and add in salt/pepper and squeeze the lemon over the mixture and blend well.

stuff the fish and then make foil pockets for them for on the grill. cook one side and then flip to cook the other side. after flipping, open one side of the pocket to release excess moisture and so you can check doneness.

depending on size of fish and heat of fire should be done in under 8 minutes.

if i get lucky and find real charcoal, i always make sure to cook this - the real charcoal gives it an excellent flavor!
