Grass clippings have a fairly high nitrogen rate. I would count them as a 'green'. Add them to cardboard bits about one to one by weight.

The "pheww" your smelling is the lack of a brown.

If I was running a 3 barrel set up, when barrel #1, was full I'd tip it on its side and fork it into barrel #2. When #2 was full (about three fill up of #1) and so on till barrel #3 was full.

Mechanical airation of a bin is easy compared to a barrel.

Barreles are um more discreet. So your neighborhood esthetic is probably paramount.

Might want to try posting this question in the Vermicomposting Section. Perhaps one of the people raising worms in that forum may have tried out what you are attempting to do and could give you some pointers.

How are you moving the substance from "barrel" to "barrel"? I move quit a bit of compost throughout the year. I'm interested in a method like this because I feel like it yields better results, but it could be a lot of work! Do you do it all by hand or do you have wheel loaders?
